Sunday Dinner

  • banana-berry smoothie (1/2 banana, 1/2 cup frozen berries, 3/4 cup almond milk): 115 calories
  • mushroom, zucchini, sweet potato, and baby bok choy stir-fry: 310 calories

Total: 425 calories


  • 5 almonds: 35 calories

Day Total: ~1,500 calories


Mushroom, Zucchini, Sweet Potato and Baby Bok Choy Stir Fry:


  • 100g king oyster mushrooms or any other mushroom, sliced
  • 1 small zucchini
  • 175g cubed sweet potato, boiled
  • 125g baby bok choy
  • 1 clove garlic, diced
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp soy sauce
  1. Heat oil in a wok or pan before adding chili powder, black pepper, and cayenne pepper. Fry for 20 seconds
  2. Add garlic and mushrooms and stir fry for 4 - 5 minutes.
  3. Add baby bok choy and soy sauce. 
  4. Fry until baby bok choy starts to wilt and add sweet potato.
  5. Fry until little to no liquid remains.
