Garlic Spinach Sauce

Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic, diced
  • 4 oz (113g) frozen spinach
  • 2 tbsp Greek yogurt
  • 2 tbsp tomato basil pasta sauce
  1. Heat oil in a pan on medium and add garlic. Fry until you can smell the garlic.
  2. Defrost spinach and add to the garlic.
  3. Add yogurt and pasta sauce and mix. 
  4. Leave on heat until everything has warmed through and add in pasta. Stir.

Spinach Turkey Meatballs

Ingredients

  • ~1 lbs lean ground turkey
  • 175 grams frozen spinach
  • 1/4 cup oats
  • 2 tbsp Parmesan cheese (optional)
  • 1 tsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion (~70g), grated
  • 1/2 tbsp oregano
  • black pepper and salt to taste
  1. Pre-heat oven to 425 F.
  2. Defrost frozen spinach and squeeze out the liquid.
  3. In a bowl mix all the ingredients and let stand in a fridge for 15 to 30 minutes.
  4. Roll into balls and place on a baking sheet.
  5. Bake for 10-15 minutes, flip, and then bake for another 10 minutes.
