Roasted Radishes with Soy Sauce and Toasted Sesame Seeds

In case you’re interested in the roasted radish recipe I used, I loosely followed this and added mushrooms in the last fifteen minutes of roasting.

I’ve never been fond of raw radishes (the only way I’d ever seen them), but I bought some because they looked nice and were on sale at the supermarket. I’ve got to say that cooking the radishes makes them so much more delicious and gets rid of that awful bitter radish taste. Also, if you’re looking for a less carby alternative to roasted potatoes, I’d recommend this. The texture is less starchy and more waxy, but there’s something really similar to roasted potatoes overall.

  • tahini dressing (1/2 tbsp tahini, 1/2 tbsp lemon juice, 1/2 tbso water, 1 small clove garlic, a pinch of cumin, a pinch of salt, a pinch of black pepper): 50 calories

Total: 320 calories

Dinner

  • 2 cups lima bean and chicken soup: 225 calories
  • 2 cups spring mix greens: 10 calories
  • 45g avocado: 65 calories
  • 3/4 cup frozen peach, strawberries, and mangoes: 45 calories
  • orange balsamic vinaigrette (1 tbsp orange juice + pulp, 2 tsp olive oil, 1 tsp balsamic vinegar, 1 tsp dijon mustard): 100 calories

Total: 445 calories

Snack

  • banana-strawberry smoothie: 140 calories

Day Total: ~1,500 calories

Lunch

  • 1 cup turkey chili with okra: 235 calories
  • 1 tbsp sour cream: 20 calories
  • scallions: 5 calories
  • 2 cups spring mix salad: 10 calories
  • 25g tomatoes: 5 calories
  • 50g red bell peppers: 5 calories
  • balsamic honey mustard dressing (2 tsp olive oil, 1 tsp balsamic vinegar, 1 tsp dijon mustard, 1 tsp honey): 115 calories

Total: 395 calories

Honey Dijon Salad Dressing

Ingredients

  • 1 tbsp olive oil
  • 1 or 2 tsp lemon juice
  • 1/2 tsp honey
  • 1/2 tsp dijon mustard
  • 1/4 tsp oregano or other herbs
  • a pinch of salt and pepper
  1. Mix everything until the honey and mustard are dissolved in the dressing.

Snack

  • green tea
  • 1/2 cup pineapple: 40 calories
  • 15 cherries: 65 calories

Lunch:

  • roast chicken breast: 215 calories
  • Salad (romaine lettuce, avocados, tomatoes, red onion, hard boiled egg, feta cheese): 120 calories
  • 1 tbsp honey balsamic dressing (3 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp honey, 1 tsp dijon mustard, 1 tsp black pepper, 1 tsp oregano, and a pinch of salt): 100 calories
  • 3 olives: 50 calories

Total:  485 calories

Tuesday Snack:

Dinner:

  • 1/2 cup whole wheat pasta: 100 calories
  • garlic spinach sauce: 205 calories
  • 1.5 tbsp Parmesan: 45 calories
  • king oyster mushrooms: 45 calories

Total: 395 calories

Snack: 

  • 8 almonds: 55 calories

Day Total: ~1,550 calories

Garlic Spinach Sauce

Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic, diced
  • 4 oz (113g) frozen spinach
  • 2 tbsp Greek yogurt
  • 2 tbsp tomato basil pasta sauce
  1. Heat oil in a pan on medium and add garlic. Fry until you can smell the garlic.
  2. Defrost spinach and add to the garlic.
  3. Add yogurt and pasta sauce and mix. 
  4. Leave on heat until everything has warmed through and add in pasta. Stir.

Sunday Dinner

  • banana-berry smoothie (1/2 banana, 1/2 cup frozen berries, 3/4 cup almond milk): 115 calories
  • mushroom, zucchini, sweet potato, and baby bok choy stir-fry: 310 calories

Total: 425 calories

Snack:

  • 5 almonds: 35 calories

Day Total: ~1,500 calories

Mushroom, Zucchini, Sweet Potato and Baby Bok Choy Stir Fry:

Ingredients

  • 100g king oyster mushrooms or any other mushroom, sliced
  • 1 small zucchini
  • 175g cubed sweet potato, boiled
  • 125g baby bok choy
  • 1 clove garlic, diced
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp soy sauce
  1. Heat oil in a wok or pan before adding chili powder, black pepper, and cayenne pepper. Fry for 20 seconds
  2. Add garlic and mushrooms and stir fry for 4 - 5 minutes.
  3. Add baby bok choy and soy sauce. 
  4. Fry until baby bok choy starts to wilt and add sweet potato.
  5. Fry until little to no liquid remains.

Lunch

  • Chicken breast: 200 calories
  • Lettuce: 15 calories
  • Tomatoes: 20 calories
  • Red bell pepper: 15 calories
  • 1/2 avocado: 80 calories
