Honey Dijon Salad Dressing

Ingredients

  • 1 tbsp olive oil
  • 1 or 2 tsp lemon juice
  • 1/2 tsp honey
  • 1/2 tsp dijon mustard
  • 1/4 tsp oregano or other herbs
  • a pinch of salt and pepper
  1. Mix everything until the honey and mustard are dissolved in the dressing.

Dinner

  • 60g whole wheat pasta: 220 calories
  • quick pasta sauce (1/2 cup crushed tomatoes, 1 small onion, 1 clove garlic, pickled hot pepper rings, 1 tsp olive oil, 1 tbsp Parmesan, salt, oregano): 160 calories
  • Grilled zucchini: 40 calories
  • Roasted red pepper: 30 calories
  • 1/2 tbsp Parmesan: 15 calories
  • Baby bok choy: 30 calories

Total: 495 calories

Snack

  • 1 cup almond milk: 40 calories
  • 5 walnut halves: 70 calories
  • 1 cup Oolong tea

Day Total:  ~1,600 calories

Spinach Turkey Meatballs

Ingredients

  • ~1 lbs lean ground turkey
  • 175 grams frozen spinach
  • 1/4 cup oats
  • 2 tbsp Parmesan cheese (optional)
  • 1 tsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion (~70g), grated
  • 1/2 tbsp oregano
  • black pepper and salt to taste
  1. Pre-heat oven to 425 F.
  2. Defrost frozen spinach and squeeze out the liquid.
  3. In a bowl mix all the ingredients and let stand in a fridge for 15 to 30 minutes.
  4. Roll into balls and place on a baking sheet.
  5. Bake for 10-15 minutes, flip, and then bake for another 10 minutes.
