Leek and Potato Soup

Ingredients:

  • 400g leeks (about 3 or 4 leeks)
  • 400g potatoes (2 medium sized potatoes)
  • 1.5 tbsp olive oil
  • 2 cups vegetable stock
  • 3 cups water
  • 1 tsp black pepper
  • 1/2 tsp dried oregano
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  1. Cut off the green parts of the leeks, slice them in half lengthwise, and chop into 1 cm strips. 
  2. Put the chopped leek into a large bowl filled with cold water and let it sit.
  3. Wash the potatoes and chop them into bite sized pieces. Leave the skins on since they contain fiber and lots of vitamins and minerals.
  4. Heat oil in a pot and add rinsed leeks. Cook until translucent.
  5. Add potatoes, oregano, thyme, vegetable stock, and water. 
  6. Simmer until the potatoes are soft. 

Makes 7 or 8 1 cup servings.
